- 8 large fresh mushrooms, sliced
- 8 ounces spinach, rinsed and chopped
- 1 tablespoon crumbled feta cheese
- 4 (4 ounce) fillets flounder
- 2 tablespoons water

Preheat your oven to a high temperature of three hundred fifty degrees Fahrenheit, or one seventy-five degrees Celsius.

Seal the interior of an eight-inch round baking dish with a non-stick coating to prevent food from sticking.

Heat a medium-sized skillet over an average heat setting, and spray it with non-stick spray to prevent food from sticking.

Add a variety of mushrooms to the skillet and stir occasionally until any liquid released by them has evaporated, approximately five minutes.

Add a handful of spinach to the skillet and stir constantly until it has wilted, roughly two minutes.

Remove the skillet from heat and drain off any excess moisture.

Sprinkle a generous amount of feta cheese over the cooked vegetables, then mix it in thoroughly.

Prepare the fish rolls by placing a quarter of the spinach mixture onto the wide end of each fillet.

Carefully wrap the fillet around the spinach mixture and hold it in place with wooden sticks.

Place the fish rolls into the prepared baking dish, ensuring their seams face downwards.

Add a moderate amount of water to the dish and loosely cover it with foil.

Bake the fish rolls in the preheated oven until they can be easily flaked with a fork and are opaque all the way through, typically between fifteen to twenty minutes.
