Spinach and Feta Phyllo Pie
Ingredients
  • 3 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 tablespoon vegetable oil
  • 1 1/2 cups finely chopped onion
  • 8 ounces feta cheese, crumbled
  • 1 1/4 cups shredded Swiss cheese
  • 3/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 cup chopped fresh parsley
  • 1 dash ground cinnamon
  • 1 cup butter, melted
  • 1 (16 ounce) package phyllo dough

Preheat your oven to the optimal temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).

Next, prepare a steamer by placing a generous amount of spinach on top of 1 inch of boiling water, then cover it. Allow the spinach to cook until it reaches your desired level of tenderness, which should take anywhere from 2 to 6 minutes.

Drain the spinach and use a press or your hands to remove as much excess water as possible. While this is happening, heat some oil in a large skillet over medium heat. Sauté the onion until it's tender but not browned, taking care to avoid any unwanted browning.

Once the onion is cooked, stir in your cooked spinach and continue to cook until all moisture has evaporated. Remove the skillet from the heat source and let it cool down to room temperature.

In a large mixing bowl, combine your selection of cheeses - feta, Swiss, and Parmesan - along with some eggs, parsley, cinnamon, cooked spinach, and onion mixture. Stir everything together until it's well combined.

Next, take a 17x11-inch jelly roll pan and brush the bottom with some melted butter. Place one sheet of dough in the pan, then brush it with more butter. Spread your spinach and cheese mixture evenly over the dough, making sure to cover the entire surface.

Continue layering with remaining dough sheets, brushing every other sheet with butter as you go. Make sure to tuck the edges of the dough under tightly, and don't forget to brush the top sheet with butter before you're done.

Using a sharp knife, cut the top layer of dough into diamond shapes.
