  • 1 small onion, chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 1 (6 ounce) package fresh mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 pint cherry tomatoes, halved

Fill a large pot with water that has been lightly seasoned with salt, then bring it to a vigorous boil. Submerge the tortellini and cook, stirring periodically, until they rise to the surface and the filling is heated through, taking anywhere from 3 to 5 minutes. Drain the water.

Meanwhile, melt butter in a large skillet over medium heat. Sauté sliced onions until they become soft and lose their crunchiness, approximately 5 minutes. Combine chopped spinach, softened cream cheese, sautéed mushrooms, grated Parmesan, and milk in the skillet; stir until everything is well incorporated and cook until the cream cheese has melted and the mushrooms are tender, about 5 minutes.
