Spinach and Barley Stew
Ingredients
  • 1 cup uncooked pearl barley
  • 3 cups water
  • 1 teaspoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried rosemary
  • 3/4 cup small fresh mushrooms
  • 1 cup chopped yellow bell pepper
  • 2 tablespoons white wine
  • 1 (15.5 ounce) can white beans, drained and rinsed
  • 1 (14.5 ounce) can Italian-style diced tomatoes, drained
  • 2 cups fresh spinach
  • 1 pinch red pepper flakes
Instructions
1
Boil the barley and water in a large cooking vessel until they reach a rolling boil.
2
Cover the pot, then decrease the heat to a low simmer and let it cook for 30 minutes, or until the barley is tender.
3
Heat the olive oil in a large cooking pot over medium heat.
4
Cook the onion and garlic in the pot until they become soft and fragrant, stirring occasionally. Add a pinch of rosemary to enhance the flavor.
5
Combine the mushrooms, yellow bell pepper, and wine in the pot.
6
Let it cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
7
Add the cooked barley, beans, tomatoes, and spinach to the pot.
8
Season with a generous amount of red pepper flakes to add depth to the dish.
9
Continue cooking the mixture for an additional 10 minutes, or until the spinach has wilted and the flavors have melded together.
