Spinach and Artichoke Lasagna
Ingredients

  • 9 uncooked lasagna noodles
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1 (14.5 ounce) can vegetable broth
  • 1 tablespoon chopped fresh rosemary
  • 1 (14 ounce) can marinated artichoke hearts, drained and chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed, drained and squeezed dry
  • 1 (28 ounce) jar tomato pasta sauce
  • 3 cups shredded mozzarella cheese, divided
  • 1 (4 ounce) package herb and garlic feta, crumbled

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the baking dish, spray it with a non-stick cooking spray to prevent food from sticking.

Next, fill a large pot with water and add a moderate amount of salt to the water. Bring the water to a rolling boil, then carefully add your noodles and cook for 8-10 minutes or until they reach the desired level of doneness.

Subsequently, heat a large skillet over medium-high heat and spray it with the same non-stick cooking spray.

Saute a sliced onion for 3 minutes, or until it becomes tender and slightly crispy. Add minced garlic to the skillet and cook for another minute, stirring constantly.

Now, pour in a sufficient amount of broth and add some chopped rosemary to the skillet. Bring the mixture to a boil, then stir in artichoke hearts and fresh spinach leaves. Reduce the heat to medium-low and let it simmer for 5 minutes, stirring occasionally.

Add pasta sauce to the skillet and stir well to combine.

To assemble the dish, place a quarter of the artichoke mixture at the bottom of your prepared baking dish.

Add 3 cooked noodles on top, followed by a quarter cup of mozzarella cheese. Repeat this process two more times, finishing with the artichoke mixture and a generous amount of mozzarella cheese.

Finally, sprinkle some crumbled feta cheese over the top of the dish.

Place the baking dish in the oven and bake, covered, for 40 minutes.

After 40 minutes, remove the cover and continue baking for an additional 15 minutes or until the dish is hot and bubbly.
