- 1 tablespoon curry powder
- 1 pinch salt, or to taste
- 1 pinch white sugar, or to taste

Heat a generous amount of oil in a large cooking vessel over a moderate flame; cook and stir the sautéed red onion, red bell pepper, garlic, and ginger until they are tender and fragrant, approximately 5 minutes.

Combine the pureed watermelon, diced tomatoes, a squeeze of fresh lime juice, curry powder, salt, and sugar in the onion mixture; bring the entire blend to a rolling boil. Lower the heat to a low simmer and let it cook, uncovered, until the watermelon and tomatoes have begun to break down slightly, around 10 minutes.

Fill four sterilized containers with the chutney mixture and seal them tightly; invert the jars to mix the contents thoroughly for 5 minutes. Right-side up, refrigerate the sealed containers immediately.
