Spicy Veggie Fajitas with Cheese and Sour Cream
Ingredients
  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 2 green bell peppers, sliced
  • 2 yellow bell peppers, sliced
  • 1/2 onion, sliced
  • 1 cup mushrooms, sliced
  • 3 green onions, chopped
  • lemon pepper to taste

Heat a large skillet over medium heat, then pour in olive oil and minced garlic. Allow the garlic to soften for 2 minutes before adding sliced green and yellow bell peppers. Let these vegetables cook for another 2 minutes, then introduce chopped onions into the pan. Continue cooking until the onions are translucent, after which add sliced mushrooms and chopped green onions to the skillet. Sprinkle a pinch of lemon pepper over the vegetables, mixing them in thoroughly. Cover the pan and continue cooking until all the ingredients are tender and fully incorporated
