Spicy Vegan Ramen
Ingredients
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons chili-garlic sauce, or more to taste
  • 1 teaspoon grated fresh ginger
  • 3 tablespoons creamy peanut butter
  • 2 (3 ounce) packages ramen noodles
  • 2 tablespoons chopped peanuts
  • 2 medium green onions, thinly sliced diagonally
Instructions
1
Combine soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and grated ginger in a small bowl. Mix until the ingredients are fully incorporated, creating a smooth paste. Add peanut butter to the mixture and whisk until it is thoroughly combined and has an even consistency. Set the sauce aside for later use.
2
Heat 4 cups of water in a large pot over high heat, bringing it to a rolling boil. Once the water is boiling, discard any added flavor packet and add ramen noodles to the pot. Cook the noodles for 4 to 5 minutes, or until they are tender and have achieved the desired level of doneness.
3
Carefully pour the cooked noodles into a separate container, reserving some of the noodle water in the process. This reserved water will be used to adjust the consistency of the sauce later on.
4
Pour the prepared sauce over the cooked ramen noodles, gently tossing them until they are evenly coated. If the sauce is too thick, you can thin it out by adding a small amount of the reserved noodle water. This will help achieve your desired level of sauce consistency.
5
Serve the hot noodles immediately, garnished with peanuts and green onion for added flavor and visual appeal.
