- 1 1/3 cups chopped onion
- 1 cup thinly sliced bell peppers, any color
- 2 cloves garlic, minced, or to taste
- 2 1/2 cups chopped tomatoes
- 1 hot chile pepper, seeded and finely chopped, or to taste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 large eggs

Heat a generous amount of olive oil in a skillet over medium heat. Introduce the onion, bell pepper, and garlic into the skillet; cook and stir until the vegetables have become tender and the onion has lost its raw appearance, approximately 5 minutes.

Concurrently, combine tomatoes, chile pepper, cumin, paprika, and salt in a separate container.

Mingle the tomato mixture with the onion mixture. Allow it to simmer, uncovered, until the juices have evaporated and the flavors have melded together, roughly 10 minutes.

Create four distinct depressions in the tomato mixture; place eggs into these depressions. Cover the skillet and cook until the eggs have achieved a firm yet moist texture, around 5 minutes.
