- 1/2 cup rice vinegar
- 2 tablespoons minced garlic
- 2 tablespoons Thai fish sauce
- 1 1/2 teaspoons Thai red curry paste
- 2 tablespoons lime juice
- 1 tablespoon red pepper flakes
- 1/2 cup finely chopped unsalted peanuts

Start by placing the grated carrots in a spacious container.

Combine sugar, water, and vinegar in a saucepan and heat it until the sugar dissolves, approximately 5 minutes. Decrease the heat to a moderate level; add garlic, fish sauce, and curry paste to the sugar mixture and let it simmer until all the flavors merge together, taking around 2 to 5 minutes. Remove the saucepan from heat and let it cool down completely, which may take about 30 minutes.

Once the dressing has cooled, stir in some fresh lime juice and a few red pepper flakes. Pour this dressing over the grated carrots, then add some peanuts to it and toss everything together so that the carrots are well-coated. Finally, refrigerate this salad until it's chilled and ready to serve, which should take at least 30 minutes.
