  • 1 onion, chopped
  • 1/4 cup green bell pepper
  • 1 medium head cabbage, cored and coarsely chopped
  • 1/4 cup water
  • 1 clove garlic, crushed
  • 2 sprigs fresh thyme
  • 1 Scotch bonnet chile, seeded and thinly sliced
  • salt and ground black pepper to taste

Heat the butter in a large skillet over high heat, stirring occasionally until it starts to melt. Introduce the sliced onion and diced bell pepper into the skillet, stirring constantly until they begin to lose their crispness, approximately 3-5 minutes. Next, add the shredded cabbage, water, minced garlic, and sprigs of thyme to the skillet; bring the mixture to a rolling boil. Gradually decrease the heat to low and cover the skillet, allowing it to simmer until the cabbage is tender, typically 8-10 minutes.
