Spicy Southern Fried Cabbage

  • 1 small head cabbage, thinly sliced
  • 1 teaspoon white sugar
  • 6 slices bacon
  • 5 tablespoons corn bread mix
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chopped onion
  • 2 fresh jalapeno peppers, seeded and julienned
  • salt and pepper to taste

Begin by adding the shredded cabbage to a substantial container, and then sprinkle the sugar over it. This process will help to remove any excess moisture from the cabbage, resulting in a more manageable texture. Place bacon strips in a large, deep frying pan. Cook over medium-high heat until the bacon is uniformly browned on all sides. Remove, crumble and set aside, reserving the pan's grease in the process.

In a small, separate container, combine the cornbread mix and cayenne pepper. Mix these ingredients together until they are well incorporated, then stir them into the cabbage until it is evenly blended. The bacon that was previously cooked in this pan, will now be used to sauté the onion and jalapeno in its hot grease until they are tender. Add the cabbage to this pan, and season it with salt and pepper according to your preference. Cook until the cabbage has wilted, approximately 15 minutes. Finally, stir in the crumbled bacon, and serve the dish immediately.
