Spicy Sicilian Broccoli Rabe
Ingredients
  • 1 bunch broccoli rabe, ends trimmed
  • 2 tablespoons olive oil, divided
  • 1 clove garlic, very thinly sliced
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons water
  • 1/4 teaspoon kosher salt

Remove the tough, fibrous lower parts from the broccoli rabe and strip away its outer layer. Set aside the delicate florets and leaves for later use.

Heat a large skillet over high heat, allowing it to reach its maximum temperature. Add 1 tablespoon of olive oil, minced garlic, and a pinch of red pepper flakes; cook until the mixture is fragrant and aromatic, approximately 45 seconds. Add the lower stems of broccoli rabe; cook until they are evenly coated with oil and starting to soften, roughly 45 seconds. Pour in water; continue cooking until the stems are mostly tender and have lost some of their crunch, around 3 to 4 minutes. Stir in the reserved florets and leaves; cook for an additional 5 minutes, or until all the broccoli rabe is tender.

Transfer the cooked broccoli rabe and its flavorful juices to a serving dish. Drizzle with the remaining 1 tablespoon of olive oil.
