Spicy Shrimp Stew
Ingredients
  • 1 1/2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and chopped, or more to taste
  • 3 cloves garlic, minced
  • 2 (14.5 ounce) cans Mexican-style stewed tomatoes, undrained
  • 2 1/3 cups chicken broth
  • 1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
  • 1 (12 ounce) package fully cooked hot Italian sausage, cut into 1/4-inch thick slices
  • 1 pound raw small shrimp, shelled and deveined

Heat a substantial amount of oil in a large cooking vessel over a moderately high heat level. Introduce the onion, bell pepper, and jalapeno into the pot and cook until they become soft and palatable, approximately 5 minutes. Incorporate the garlic into the mixture and continue to cook until it emits a fragrant aroma, roughly 1 minute.

Remove any excess liquid from the tomatoes and place them on a flat surface. Dice the tomatoes into smaller pieces and reintroduce them to the pot. Add chicken broth, rice seasoning blend, and a packet of flavor enhancer to the mixture, cover the vessel, and initiate boiling. Gradually decrease the heat level and allow the rice to become tender, around 25 minutes.

Introduce sliced sausage into the pot and continue to simmer for an additional 5 minutes. Combine the shrimp with the mixture, and cook until they turn a vibrant pink color on the outside and the meat becomes opaque, approximately 3 minutes more.
