Spicy Sausage Marinara
Ingredients
  • 1 pound spicy Italian sausage, casing removed
  • 1 tablespoon fresh parsley, minced
  • 1/2 cup dry white wine
  • 1/4 cup heavy cream
  • 3 1/2 cups tomato sauce
  • 1 cup water
  • 14 1/2 ounces dry penne pasta
  • 1 cup finely grated Parmigiano-Reggiano cheese

Cook the sausage in a Dutch oven over medium heat until it's nicely browned, taking around 15 minutes to achieve this.

Next, add some chopped parsley into the pot and stir it in; continue cooking for another 2 minutes.

After that, pour in some wine and let it simmer in the pot until almost all of it has evaporated, which should take around 3 to 5 minutes.

Subsequently, stir in a generous amount of heavy cream and increase the heat to high; bring the mixture to a rolling boil.

Now, add in some tomato sauce and water, stirring well to combine; return the mixture to a boil.

At this point, reduce the heat to low and let the sauce simmer gently for about an hour.

On a separate note, bring a large pot of salted water to a boil and add some penne pasta; return the water to a boil, then cook the pasta, stirring occasionally, until it's tender but still retains some firmness in the middle, which should take around 11 minutes; drain the pasta.

Combine the cooked penne with the sauce and let it sit for about 2 minutes before serving.

Finally, serve the pasta hot, topped with a generous helping of grated Parmigiano-Reggiano cheese.
