  • 1 medium onion, chopped
  • 1/4 cup lime juice
  • salt and pepper to taste
  • 1/2 cup chopped cilantro

Combine diced tomatoes and sliced jalapeños in a large saucepan; submerge them in water. Place the pot over high heat and bring the mixture to a rolling boil; continue cooking until the tomatoes and jalapeños have lost their vibrant color, approximately 15 minutes.

Drain the water from the pot thoroughly.

Transfer the tomatoes and jalapeños to a high-powered blender; add finely chopped onion, freshly squeezed lime juice, a pinch of salt, a few grinds of pepper, and chopped cilantro. Blend the mixture until it reaches your desired texture; then refrigerate to chill.
