Ingredients
- 1 1/4 cups herb-seasoned croutons
- 1 (12 ounce) jar salsa
- 1 tablespoon olive oil
- 1 cup finely chopped onion
- 1 jalapeno pepper, seeded and minced
- 3 cloves garlic, minced
- 1 pound ground chicken
- 1/2 pound ground pork
- 1 cup shredded pepperjack cheese
- 1/4 cup cilantro, minced
- 1 egg
- 1 1/2 tablespoons taco seasoning mix
- 1 tablespoon Worcestershire sauce
- 2 tablespoons barbecue sauce
- 2 tablespoons brown sugar
Instructions
1
Begin by preheating your oven to the optimal temperature of 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a moment to prepare your loaf pan by lightly coating it with butter or cooking spray.
2
Meanwhile, combine the croutons and salsa in a large mixing bowl. Allow this mixture to sit for 15 minutes, allowing the flavors to meld together and soften.
3
In a separate pan, heat some olive oil over medium heat. Then, add the onion, jalapeño pepper, and garlic to the pan, stirring constantly as they cook until the onion becomes translucent. This process should take around 5 to 8 minutes.
4
Now, it's time to combine the various ingredients in a large bowl. Mix together ground chicken, ground pork, pepper Jack cheese, cilantro, egg, taco seasoning, and Worcestershire sauce. Make sure to mash any unbroken croutons before adding them to the mixture.
5
Mix this new combination with the cooked onion mixture from the pan. Then, transfer the entire mixture to your prepared loaf pan.
6
Meanwhile, prepare a small bowl by mixing together barbecue sauce and brown sugar. Stir the mixture until the sugar has dissolved, creating a smooth consistency.
7
Brush the barbecue sauce and brown sugar mixture evenly over the top of your meatloaf. Next, create a makeshift tent by folding a 12-inch-long piece of aluminum foil over the top of your meatloaf.
8
Bake your meatloaf in a preheated oven for approximately 1 hour, or until it reaches an internal temperature of at least 165 degrees Fahrenheit. During the last 10 minutes of baking, remove the foil tent to allow for a golden-brown finish.
9
Once your meatloaf is done, remove it from the oven and cover it with foil. Let it stand for 15 minutes before slicing and serving.
