Spicy Salmon Rice Bowls
Ingredients
  • 4 (4 ounce) salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons avocado oil
  • 2 tablespoons chili-garlic sauce, or more to taste
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon honey, or to taste
  • 1/2 teaspoon sesame oil
  • 1 medium lime, juiced
  • 2 cups cooked brown rice
  • 1 cup matchstick carrots
  • 1 cup snow peas, trimmed
  • 1 medium avocado, sliced
  • 1/2 medium red bell pepper, julienned
  • 3 stalks green onion, chopped
  • 1/4 cup natural creamy peanut butter
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon garlic powder
  • 1 tablespoon water, or as needed
  • 2 teaspoons sesame seeds
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). To make the cooking process more efficient, cover a baking sheet with aluminum foil and position salmon fillets on top of it.
2
To prepare the marinade, combine soy sauce, avocado oil, chili-garlic sauce, grated ginger, honey, sesame oil, and freshly squeezed lime juice in a small bowl. Mix the ingredients well to create a smooth sauce.
3
Place the prepared marinade over the salmon fillets, ensuring they are evenly coated. Set aside any remaining sauce for later use.
4
Next, bake the salmon fillets in the center of your preheated oven until they are tender and flake easily with a fork, approximately 15 minutes. Remove the salmon from the oven and allow it to rest for about 15 minutes.
5
Divide cooked white rice evenly among four plates. Place a salmon fillet on top of each serving, followed by an assortment of vegetables such as carrots, snow peas, sliced avocado, and bell peppers. Sprinkle chopped green onion over the vegetables for added flavor.
6
In a separate bowl, whisk together the reserved marinade with peanut butter, rice wine vinegar, and garlic powder until you achieve your desired consistency. Add water as needed to achieve the perfect balance.
7
Finally, drizzle the prepared dressing over the bowls and sprinkle with sesame seeds for a finishing touch.
