Ingredients
- 2 teaspoons olive oil
- 1 head cauliflower, chopped into small florets
- 2 carrots, chopped
- 2 cups boiling water
- 1 cube vegetable bouillon
- 1 (14 ounce) can reduced-fat coconut milk
- 1 cup red lentils
- 1 teaspoon garlic powder
- 1 teaspoon dried onion flakes
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1 bunch kale leaves, stems and inner ribs discarded, leaves coarsely chopped
Instructions
1
Heat a generous amount of olive oil in a substantial cooking vessel over an elevated heat level. Introduce the cauliflower and carrots, then subject them to a thorough cooking process until they become tender, taking approximately 7 to 8 minutes.
2
Prepare a liquid mixture by combining boiling water and vegetable bouillon in a separate container, stirring until the bouillon is fully incorporated. Add broth and coconut milk to this mixture, then pour it into the cooking vessel with the cauliflower.
3
Bring the contents of the pot to a rolling boil, then add lentils, garlic powder, onion flakes, curry, paprika, turmeric, and cumin to the pot. Cover it and allow the mixture to simmer gently until the lentils are fully cooked and tender, which should take around 20 minutes.
4
Once the lentils have completed their cooking process, stir in some kale and let it sit over a low heat source for 5 minutes. Remove the pot from the heat source and serve the dish immediately.
