Spicy Red Chile Stew with Beef or Pork
Ingredients
  • 2 cups water
  • 1/2 teaspoon salt
  • 2 pounds beef stew meat, cut into 1 1/2 inch cubes
  • 4 tablespoons guajillo chile powder
  • 2 cloves garlic, minced
  • 1 1/4 teaspoons dried Mexican oregano
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon ground cumin
  • 1 tablespoon chopped fresh parsley
  • salt to taste
Instructions
1
Begin by placing the water and salt in a saucepan, followed by adding beef cubes to it.
2
Bring the mixture to a rolling boil and then decrease the heat, allowing it to simmer for 30 minutes.
3
In a separate bowl, combine chile powder, minced garlic, and oregano.
4
Gradually add enough of the beef cooking water to create a smooth paste, incorporating it into the spice mixture.
5
After 30 minutes of simmering, stir the spice paste into the beef mixture to infuse it with flavor.
6
In a large skillet, heat oil over medium heat.
7
Gradually add flour to the skillet and stir constantly until it turns golden brown.
8
Take 1 cup of the beef cooking water and whisk it into the flour mixture until a smooth consistency is achieved.
9
Stir in cumin, chopped parsley, and salt to add depth to the sauce.
10
Transfer the thickened sauce mixture into the original saucepan with the beef.
11
Allow it to simmer until tender, approximately 1 1/2 hours.
