  • 6 potatoes, diced
  • 1 (10 ounce) package frozen mixed peas and carrots
  • 3 tablespoons water, or as needed

Preheat a large skillet over medium-high heat, allowing it to warm up for a few minutes. Introduce the oil into the skillet and bring it to a state of high heat. Next, add the onion to the skillet and sprinkle with a blend of spices including cumin, turmeric, coriander, chili powder, and salt. Continue to cook the onion by stirring it until it reaches a deep brown color.

Gradually decrease the heat of the skillet to medium, then introduce the potatoes, carrots, and peas into the mixture. Ensure that these ingredients are well-coated with the oil and spices by stirring them thoroughly. Cover the skillet to allow the ingredients to cook together, and continue to monitor their progress until they reach a tender state. This should take approximately 20 minutes, at which point the potatoes will be cooked through.
