Ingredients
- 1 pound thick asparagus spears, trimmed
- 1 tablespoon minced garlic
- 2 teaspoons crushed red pepper flakes
- 1 teaspoon mustard seed
- 1/2 teaspoon pink peppercorns
- 1 3/4 cups distilled white vinegar
- 1 cup water
- 1 tablespoon salt
- 1 teaspoon white sugar
Instructions
1
Begin by placing the fresh asparagus in a clean, sterilized quart-sized canning jar. Add minced garlic, dried pepper flakes, mustard seeds, and whole peppercorns to the jar for added flavor.
2
In a medium-sized saucepan, combine apple cider vinegar, water, salt, and granulated sugar. Place the saucepan over medium heat and bring the mixture to a rolling boil.
3
Reduce the heat to a low simmer and let the vinegar mixture cook for 5 minutes, stirring occasionally. Once the cooking time has elapsed, turn off the heat.
4
Carefully pour the vinegar mixture over the asparagus in the canning jar, making sure all of the vegetables are covered. Secure the lid on the jar and let it sit at room temperature for about 1 hour, allowing the seal to form.
5
Once the lid has sealed, transfer the jar to the refrigerator and let it chill for at least 2 days before serving. The longer it sits, the tangier the pickles will become.
