- 1/3 cup Calabrian chili peppers in oil
- 12 ounces sliced salami
- 2 tablespoons olive oil, or more as needed
- 1/4 cup butter, at room temperature

Start by adding pancetta to a chilled pan and cook over medium heat, stirring occasionally, until the pancetta begins to sizzle and turn golden brown, approximately 4-5 minutes.

Next, remove the pepper stems and seeds from the peppers if desired. Set aside 2-3 tablespoons of the rendered oil for later use.

Now, take the salami pieces and separate them slightly before adding them to a food processor. Combine the salami with the pancetta, chili oil, and Calabrian peppers in the processor. Process on and off until the mixture reaches a fine, uniform consistency. Add olive oil and butter to the processor and blend until you achieve your desired level of smoothness.

Transfer the spreadable mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 8 hours or overnight to allow the flavors to meld together.
