- 2 tablespoons water
- 1 teaspoon white sugar
- 3/4 teaspoon dry mustard powder
- 1/2 teaspoon crushed red pepper flakes
- 1 pound mustard greens, washed and chopped
- 1 (15 ounce) can cannellini (white kidney) beans, drained
- salt and ground black pepper to taste

Heat a substantial amount of olive oil in a large, heavy-bottomed pot over medium heat. Gradually cook and stir the sliced onion and minced garlic until it becomes translucent, taking approximately 5 minutes to achieve this state.

In a separate container, combine vinegar, water, sugar, dry mustard powder, and red pepper flakes. Thoroughly mix these ingredients until the sugar has fully dissolved. Subsequently, add the mustard greens to this mixture and pour it over the cooked onion and garlic. Stir everything together, cover the pot, and bring the mixture to a rolling boil. Allow it to simmer for 5 to 10 minutes, or until the liquid has been completely absorbed.

Once the greens have reached the desired consistency, add the white beans and let them heat through. Finally, season with salt and black pepper to taste
