Spicy Moong Dal Curry
Ingredients
  • 2 1/2 cups moong dal (split husked mung beans)
  • 2 1/2 cups water
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon grated fresh ginger root
  • 1 teaspoon diced jalapeno chile pepper
  • 1/2 cup diced tomatoes
  • 3 teaspoons lemon juice
  • 1/2 teaspoon ground turmeric
  • 2 teaspoons vegetable oil
  • 1 teaspoon cumin seed
  • 1/2 dried red chile pepper
  • 1 pinch Asafoetida
  • 2 cloves garlic, finely chopped
  • 1/4 cup chopped fresh cilantro
Instructions
1
First, thoroughly clean the dal by rinsing it under cold running water to remove any impurities or debris.
2
Next, combine the dal with 2 1/2 cups of water in a saucepan and let it sit for 30 minutes, allowing the dal to rehydrate.
3
Once the dal has soaked, bring it to a rolling boil along with 2 1/2 cups of water and a pinch of salt.
4
Gradually reduce the heat to a low-medium setting and continue cooking until the beans are extremely tender and the mixture has reached a rich, thick consistency.
5
If necessary, add more water to the saucepan to prevent the mixture from drying out during cooking.
6
Just as the cumin seed and red chile pepper start to sizzle in a small saucepan, add Asafoetida powder and minced garlic.
7
Combine the cooked split peas with the cumin seed mixture, stirring everything together until well incorporated.
8
Finally, add a handful of chopped cilantro to the mixture and give it a final stir.
