Ingredients
- 8 ounces cream cheese, softened
- 8 ounces sour cream
- 1 (1 pound) loaf processed cheese (i.e. Velveeta®), cubed
- 2 cups shredded Mexican cheese blend
- 2 (10 ounce) cans diced tomatoes with green chile peppers
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1 (1.25 ounce) package taco seasoning mix
- 2 tomatoes, chopped
- 1/2 cup green onions, chopped
Instructions
1
Preheat your oven to a medium-high heat setting of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, select a suitable casserole dish with a capacity of 2 quarts or a rectangular shape measuring 9 inches in length and 13 inches in width.
3
Mix the softened cream cheese, sour cream, and processed cheese together in the chosen dish until well combined.
4
Heat this mixture in the microwave for approximately 1 minute, or until it reaches a state where you can easily stir everything together.
5
Mix in the shredded cheese, diced tomatoes with chilies, spinach, and taco seasoning mix until all ingredients are fully incorporated.
6
Spread the mixture evenly across the bottom of the casserole dish.
7
Bake the dish uncovered in your preheated oven for about 30 minutes, or until it reaches a hot and bubbly consistency.
8
Just before serving, sprinkle diced tomatoes and green onions on top of the casserole for added flavor and texture.
9
Alternatively, this dish can be prepared ahead of time, refrigerated, and then baked just before serving.
