Spicy Maryland Crab Cakes

  • 1 1/8 cups crushed saltine crackers
  • 1 cup mayonnaise
  • 1 teaspoon prepared brown mustard
  • 1/4 cup chopped onion
  • 1 stalk celery, chopped
  • 1 teaspoon Old Bay Seasoning TM
  • 1 pound crabmeat

Preheat the oven to its highest temperature setting. Coat a baking sheet with a thin layer of cooking spray.

In a medium-sized bowl, combine crushed saltine crackers, mayonnaise, brown mustard, finely chopped onion, diced celery, and the savory Old Bay seasoning. Mix gently to incorporate the crabmeat, taking care not to break it up excessively. Form into six uniform patties. Arrange on the prepared baking sheet.
