  • 1/3 large sweet onion, cut into 1/2-inch slices
  • 1 tablespoon vegetable oil, or more as needed
  • 1 clove garlic
  • 1/4 cup fresh cilantro, or to taste
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • ground black pepper to taste
  • 1 pinch ground cumin, or to taste

Preheat the oven to its highest temperature setting, which is 425 degrees Fahrenheit or 220 degrees Celsius.

Arrange the habanero pepper, mango, and onion on a baking sheet in a single layer. Drizzle with olive oil and mix until the ingredients are evenly coated.

Place the baking sheet on the middle rack of the preheated oven and roast for 10 minutes. Switch to the broiler function and continue roasting for an additional 5 minutes.

Move the baking sheet to the top shelf of the oven and broil until the onion and mango start to develop a rich brown color and the habanero pepper begins to blister, approximately 3 more minutes.

Remove the baking sheet from the oven and let it cool slightly before proceeding.

Using protective gloves, carefully remove the stem from the habanero pepper and transfer it to a compact food processor or blender.

Add the mango, onion, garlic, cilantro, lime juice, and salt to the processor or blender. Season with black pepper and cumin, then pulse until the ingredients are well combined and slightly chunky.
