- 1 large sweet onion, minced
- 1 large yellow bell pepper, diced
- 4 inch piece fresh ginger root, peeled and minced
- 3 large ripe mangoes, peeled, pitted, and diced
- 1 small pineapple, peeled and diced
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 1/2 tablespoons curry powder

Preheat your saucepan over medium heat, allowing the oil to warm up. Introduce a pinch of red pepper flakes into the saucepan and let them start to sizzle, signaling that they're ready. Next, add a diced onion to the saucepan and gently stir it in.

Now, reduce the heat to a low setting and cover your saucepan. Continue cooking the onion, stirring occasionally, until it becomes soft and tender, approximately 20 minutes.

Subsequently, increase the heat to medium. Add sliced bell pepper and grated ginger to the saucepan and cook while stirring constantly, keeping it uncovered. Allow the ginger to release its fragrance, taking around 2 to 3 minutes.

After that, add diced mangoes, pineapple chunks, brown sugar, vinegar, and curry powder to the saucepan. Stir everything together, then bring the mixture to a gentle simmer. Cook for 30 minutes, stirring occasionally.
