Spicy Malaysian Okra with Shrimp
Ingredients
  • 1 tablespoon vegetable oil
  • 5 cloves garlic, minced
  • 10 uncooked shrimp - peeled, deveined, and cut in half
  • 10 fresh okra pods, sliced diagonally
  • 5 fresh red chili peppers, chopped
  • 1 teaspoon belacan (Malaysian chili-shrimp paste)
  • 2 tablespoons water
  • 2 teaspoons light soy sauce

Heat a generous amount of oil in a large cooking vessel, such as a wok or skillet, over a medium-high heat setting.

Sauté the minced garlic in the hot oil until it releases its aroma and becomes fragrant, approximately 1 minute.

Add the shrimp, okra, sliced red chilies, and belacan to the wok. Stir constantly until the chilies begin to lose their crispiness and the shrimp start to change color, becoming pinkish in hue, around 2 minutes.

Introduce a sufficient amount of water and soy sauce into the wok, stirring vigorously to combine.

Continue cooking and stirring until the okra becomes tender and has a sticky texture, taking an additional 2 to 4 minutes.
