Spicy Latin Chicken Stew
Ingredients
  • 6 skinless, boneless chicken breast halves
  • 3 (14.5 ounce) cans diced tomatoes
  • 1 (16 ounce) jar green salsa
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (1.25 ounce) package taco seasoning
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons ground red chile pepper, or to taste
  • 1 teaspoon ground cumin
  • 1/2 cup cream cheese, softened

Place the chicken breasts at the bottom of a slow cooker, and pour in a mixture of tomatoes, green salsa, black beans, pinto beans, and corn over the top of the chicken. Sprinkle a blend of taco seasoning, cilantro, ground red chile, and cumin over the entire mixture to ensure a rich flavor. Combine all the ingredients thoroughly. Cover the cooker and set it to Low, allowing the chicken to become extremely tender and the mixture to thicken over an 8-10 hour period.

For a soup-like consistency, retain all the liquid in the cooker. Alternatively, if you prefer a thicker stew, remove some of the excess liquid to achieve your desired consistency. Mix 1-2 tablespoons of the retained liquid with cream cheese in a bowl, stirring until it reaches a smooth consistency. Then, incorporate the cream cheese into the cooker to create a rich and creamy sauce. Continue cooking for an additional 15 minutes before serving.
