Spicy Korean Chicken and Potatoes
Ingredients
  • 2 1/2 pounds chicken drumettes
  • 2 large potatoes, cut into large chunks
  • 2 carrots, cut into 2 inch pieces
  • 1 large onion, cut into 8 pieces
  • 4 cloves garlic, crushed
  • 1/4 cup water
  • 1/2 cup soy sauce
  • 2 tablespoons white sugar
  • 3 tablespoons gochujang (Korean hot pepper paste)
Instructions
1
Combine the chicken, potatoes, carrots, onion, sugar, and garlic in a large pot over medium heat. Gradually add water and soy sauce to the mixture, stirring until everything is well incorporated.
2
Next, incorporate sugar and hot pepper paste into the mix to enhance flavor. Allow the ingredients to meld together.
3
Once the mixture reaches a rolling boil, decrease the heat to low and let it simmer for 45 minutes. During this time, check on the dish periodically to ensure that the chicken is tender and its juices have run clear. The vegetables should also be cooked through, and the liquid has thickened to your liking.
