Spicy Jerk Chicken Wings
Ingredients
  • 1/2 yellow onion, chopped
  • 3 habanero peppers, seeded and chopped
  • 1/2 cup green onions, sliced
  • 1/3 cup lime juice
  • 3 tablespoons soy sauce
  • 6 cloves garlic
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons brown sugar
  • 2 tablespoons vegetable oil
  • 1 tablespoon kosher salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons ground allspice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly grated nutmeg
  • 3 pounds chicken wing drumettes

Combine the yellow onion, habanero peppers, green onions, lime juice, soy sauce, garlic, fresh thyme, brown sugar, oil, salt, black pepper, allspice, dried thyme, cinnamon, cumin, and nutmeg in a blender and blend until the marinade is thoroughly smooth

Next, place the chicken drumettes in a large container and pour the blended marinade over them. Mix well to ensure the chicken is evenly coated, then cover the container with plastic wrap and refrigerate for at least 8 hours or overnight

Heat your oven to 450 degrees F (230 degrees C) and prepare a baking sheet by lining it with aluminum foil and coating it with cooking spray

Arrange the chicken drumettes evenly on the prepared baking sheet, reserving any remaining marinade in the container

Bake the chicken in the preheated oven for 25 minutes, then brush half of the reserved marinade onto the chicken and flip it over. Continue baking for an additional 15 minutes

Flip the chicken over again and brush it with the remaining marinade. Continue baking until the chicken is tender, caramelized, and reaches an internal temperature of at least 165 degrees F (74 degrees C), which should take around 10-15 more minutes

Once the chicken is cooked, remove it from the baking sheet and let it rest for 5 minutes before transferring it to a serving platter
