Spicy Jambalaya

  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 1 1/2 teaspoons chopped garlic
  • 1 cup converted long-grain white rice
  • 4 ounces smoked sausage, cut into slices
  • 4 ounces cooked ham, cut into bite-size pieces
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 cup chicken broth
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 2 (15 ounce) cans ranch-style beans, undrained

Heat a generous amount of oil in a substantial saucepan over a moderate flame. Sauté the onion, green pepper, and celery until the onions become soft and lose their crispness. Introduce garlic into the mixture and continue cooking for another minute. Incorporate rice, sausage, and ham into the saucepan. Cook for 2 to 3 minutes, allowing the rice to become evenly coated with oil and stirring constantly. Pour in a can of tomatoes combined with green chiles and chicken broth. Season the mixture with thyme and bay leaf. Bring the liquid to a rolling boil, then decrease the heat. Cover the saucepan and let it simmer for 20 to 25 minutes, or until all the liquid has been absorbed. Add beans to the saucepan and mix them in thoroughly, heating everything through until it reaches a suitable consistency.
