Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon cumin seeds
- 4 green chile peppers, sliced
- 2 tablespoons grated fresh ginger
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 tablespoon white sugar
- 2 large tomatoes, chopped
- 2 tablespoons tomato paste
- 1 tablespoon ground turmeric
- 1 tablespoon ground coriander
- 1 teaspoon red chile powder
- 2 (20 ounce) cans jackfruit, cut into 2-inch pieces
- 1 teaspoon garam masala
- salt to taste
- 1 tablespoon chopped fresh cilantro
Instructions
1
Heat a generous amount of oil in a large saucepan over medium heat, allowing it to warm up.
2
Stir the cumin seeds in the saucepan until they start to sizzle and emit a pleasant aroma, approximately 30 seconds.
3
Introduce the green chile peppers, ginger, and garlic into the saucepan, stirring constantly as they cook for 2 to 3 minutes.
4
Add the onion and sugar to the saucepan, stirring continuously until the onion is almost caramelized, taking around 5 to 10 minutes.
5
Combine the tomatoes, tomato paste, turmeric, coriander, and red chile powder in the saucepan, stirring until these flavors meld together, approximately 15 minutes.
6
Transfer the onion and tomato mixture to a food processor, where it is processed into a smooth and uniform paste.
7
Return the paste to the saucepan, adding the jackfruit as it cooks until tender, around 10 minutes.
8
Stir in the garam masala and salt to enhance the flavors, before serving the dish garnished with cilantro.
