Ingredients
- 2 teaspoons butter
- 1 cup pearl (Israeli) couscous
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup diced pimientos
- 1 pinch cayenne pepper, or more to taste
- 3 ounces shredded sharp Cheddar cheese
- 1 tablespoon chopped fresh chives
- salt and freshly ground black pepper to taste
Instructions
1
Heat the butter in a large skillet over medium heat, allowing it to melt and become liquid. Introduce the couscous into the skillet; stir constantly until it develops a light golden color, approximately 2 to 3 minutes.
2
Add the chicken broth to the skillet; bring it to a rolling boil. Lower the heat to a low setting and let it simmer until most of the liquid has evaporated, leaving the couscous soft and fluffy, around 6 to 7 minutes.
3
Stir in the heavy cream and pimentos; add a dash of cayenne pepper to give it an extra kick. Continue cooking until the couscous is tender, about 2 to 3 minutes; if necessary, add a bit more broth to achieve the desired consistency.
4
Remove the skillet from the heat source and stir in the Cheddar cheese until it's fully incorporated and melted. Add a sprinkle of chives on top; mix everything together to create a harmonious blend of flavors. Season with salt, black pepper, and an additional pinch of cayenne pepper to taste
