Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 teaspoon minced garlic
- 1 teaspoon minced fresh ginger root
- 2 star anise pods, broken into pieces
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1 (8 ounce) can tomato sauce
- 1/2 cup water
- 1 teaspoon chile powder
- 1 teaspoon garam masala
- 3/4 teaspoon salt
- 3/4 teaspoon ground cumin
- 3/4 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1 whole clove, or more to taste
Instructions
1
Preheat the cooking vessel over a moderate to high heat level.
2
Heat oil in a large cooking pot, bringing it to a temperature suitable for sautéing.
3
Once the oil is hot, add sliced onions and cook until they become transparent, taking approximately 5 minutes to achieve this.
4
Add minced garlic, grated ginger, and ground anise; stir the mixture thoroughly to combine.
5
Introduce chickpeas, tomato sauce, water, chile powder, garam masala, salt, cumin, coriander, turmeric, and ground clove into the pot.
6
Gradually decrease the heat to a lower temperature and let the mixture simmer, covered, until the chickpeas begin to soften, taking around 5 to 7 minutes.
7
Use a spoon or masher to crush some of the chickpeas directly in the pot, giving the sauce a more textured appearance.
8
Continue to simmer and cook the mixture, occasionally stirring it, until all the flavors have melded together, taking approximately 15 minutes.
9
Remove the star anise pieces and ground clove before serving the dish.
