Ingredients
- 3 tablespoons vegetable oil, or more as needed, divided
- 2 cloves garlic, crushed
- 1 ounce fresh ginger, minced
- 1 pound pork tenderloin, sliced into thin strips, or to taste
- 3 hot long green chile peppers, sliced into thin strips, or more to taste
- salt to taste
- 2 teaspoons soy sauce, or to taste
Instructions
1
Preheat a large skillet or wok over medium-high heat, allowing the oil to reach its smoking point; then sear minced garlic and grated ginger for 30 seconds to 1 minute, until they release their aroma.
2
Add the pork to the skillet; stir constantly and cook until it reaches a fully cooked state, approximately 5 to 7 minutes. Remove the pork from the skillet and set it aside on a plate.
3
Next, pour the remaining 2 tablespoons of oil into the same skillet over medium-high heat; then sauté sliced chile peppers until they are evenly coated with oil and fragrant, taking about 2 minutes.
4
Add the cooked pork back into the skillet with the chile peppers and generously sprinkle salt over the mixture. Continue to stir the ingredients together until the peppers are tender, taking an additional 5 to 7 minutes.
5
Finally, mix a sufficient amount of soy sauce into the pork mixture to enhance its color and flavor, adjusting the seasoning to achieve your desired level of saltiness.
