Spicy Hatch Chile Salsa
Ingredients
  • 5 Hatch chile peppers, stems removed
  • 1 (28 ounce) can diced tomatoes
  • 1 (14.5 ounce) can diced tomatoes with roasted garlic
  • 1/2 onion, roughly chopped
  • 1/4 cup chopped fresh cilantro
  • 1 pinch garlic powder, or to taste

Position the oven rack approximately 6 inches away from the heat source and activate the broiler. Cover a baking sheet with aluminum foil; arrange chile peppers onto the foil.

Cook under the preheated broiler until the pepper skins have undergone a transformation, turning dark and blistered, typically taking 5 to 8 minutes. Transfer the blackened peppers to a bowl and cover them with plastic wrap, allowing them to release their steam as they cool, approximately 20 minutes. Remove and discard the pepper skins.

Combine the roasted chile peppers, both types of diced tomatoes, onion, cilantro, and garlic powder in a food processor or blender until you achieve the desired texture.
