Ingredients
- 12 mild to medium hot red chili peppers
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon caraway seeds
- 1/2 teaspoon coarsely ground cumin seeds
- 1/2 teaspoon coarsely ground coriander
- 3 large garlic cloves, finely chopped
- 5 tablespoons extra-virgin olive oil, or more as desired
- salt to taste
Instructions
1
First, preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) for optimal results.
2
Next, carefully remove the stems from the chile peppers and cut them in half. If you prefer a milder harissa, remove as many seeds as possible.
3
Heat 1 teaspoon of olive oil in a small frying pan over medium heat, allowing it to warm up.
4
Add caraway, cumin, and coriander to the pan and stir until they release their fragrance, approximately 30 seconds.
5
Then, combine chile peppers, toasted spices, and garlic in a large baking dish, ensuring they are evenly coated with 1/4 cup of olive oil.
6
Place the baking dish in the preheated oven and bake until the chile peppers are extremely tender but not burnt, taking around 1 hour.
7
During this time, stir the mixture occasionally to guarantee even cooking. Once done, let it cool down.
8
Transfer the mixture to a food processor and blend until you achieve a smooth, paste-like consistency with some texture remaining.
9
Season the harissa with salt to enhance its flavor.
10
Fill a sterilized glass jar with the harissa mixture, leveling the top to create an even surface.
11
Add a sufficient amount of olive oil to cover the surface, preventing it from drying out in the future.
12
Seal the jar and refrigerate the harissa to preserve its flavor and texture.
