Ingredients
- 1 1/2 cups lime juice
- 3 tablespoons olive oil
- 2 tablespoons chili powder
- 1 teaspoon mayonnaise
- 3 pounds uncooked medium shrimp, peeled and deveined
- 1/2 cup enchilada sauce
- 1/2 (4 ounce) jar diced jalapeno peppers
- 5 teaspoons honey
- 3 teaspoons lime juice
- salt to taste
- 1/2 head red cabbage, shredded, or more to taste
- 2 bunches scallions, chopped
- 3 tablespoons olive oil
- 3 tablespoons white vinegar
- 1 small bunch cilantro, chopped
- 20 (8 inch) corn tortillas
Instructions
1
Combine the zesty flavors of lime juice, olive oil, spicy chili powder, and rich mayonnaise in a bowl. Add succulent shrimp to the mixture and allow it to infuse for at least 1 hour.
2
In a separate container, blend the savory flavors of enchilada sauce, spicy jalapeƱos, sweet honey, tangy lime juice, and a pinch of salt to create the perfect sauce.
3
In a large bowl, combine crisp cabbage, fragrant scallions, and a drizzle of olive oil to create a refreshing slaw. Add a hint of vinegar and chopped cilantro for added depth.
4
Warm tortillas in a sizzling frying pan over medium-high heat, cooking each side for approximately 30 seconds. Set aside to keep warm.
5
Preheat an outdoor grill to medium heat and lightly brush the grate with oil.
6
Carefully remove shrimp from their marinade, and grill until they turn opaque, approximately 5 minutes. Place a cooked shrimp on each tortilla, followed by a spoonful of the delicious sauce and a generous helping of slaw.
