Spicy Green Rice with Jalapenos
Ingredients
  • 2 tablespoons olive oil
  • 2 bunches green onions, sliced, white parts and tops separated
  • 2 jalapeno peppers, seeded and minced
  • 2 tablespoons sherry
  • 2 cups uncooked long-grain rice
  • salt to taste
  • 1 teaspoon black pepper
  • 2 cups chicken broth
  • 1 1/2 cups water
  • 1/2 cup minced cilantro
  • 1/2 cup minced parsley
Instructions
1
Preheat your stove by heating the olive oil in a substantial cooking vessel over a moderate heat setting.
2
Next, sauté the pale portions of the green onions alongside the jalapenos for 5 minutes; make sure they don't acquire a brown hue.
3
Then, add the sherry, rice, salt, and pepper to the mixture. Introduce the broth and water into the pot; bring it to a rolling boil.
4
After that, cover the cooking vessel and decrease the heat to a low setting. Continue cooking until the rice is tender and all the liquid has been absorbed, approximately 20 minutes.
5
Finally, use a fork to gently separate the cooked rice and stir in the cilantro, parsley, and the green onions' crowns. Transfer the dish to a warm serving container and serve it right away.
