Spicy Grapefruit and Prawns Salad
Ingredients
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 large grapefruit, peeled and sectioned
  • 1 small red onion, thinly sliced
  • 1 large avocado, peeled and cut into 1/2-inch dice
  • 2 tablespoons lime juice
  • 2 tablespoons Thai fish sauce
  • 1 fresh red chile pepper, finely chopped
  • 1/8 teaspoon brown sugar
  • 1 tablespoon chopped fresh cilantro

Fill a large container with salted water, making sure the level is moderate. Place it on high heat and wait for the water to reach a vigorous boil.

Once the water has achieved this state, carefully add the shrimp and continue to cook until they turn a vibrant pink hue on the outside and the internal meat is opaque, taking around 3 to 5 minutes.

Remove the shrimp from the boiling water and set them aside to cool down.

In a separate container, combine grapefruit segments, thinly sliced onion, diced avocado, freshly squeezed lime juice, fish sauce, diced chile pepper, and brown sugar.

Mix all the ingredients together until they are well incorporated.

Add the cooked shrimp on top of the grapefruit mixture and sprinkle some chopped cilantro for garnish.
