Ingredients
- 2 teaspoons vegetable oil
- 4 skinless, boneless chicken breast halves - cut into 1 inch pieces
- 1 1/2 cups distilled white vinegar
- 1 cup white sugar
- 1/2 cup soy sauce
- 1 tablespoon red pepper flakes, or to taste
- 2 tablespoons garlic powder, or to taste
- 1 tablespoon onion powder, or to taste
- 1/2 teaspoon ground ginger
- 1 (8 ounce) package button mushrooms, sliced
- 1 cup frozen green peas
- 3 green onions, chopped
- 3 teaspoons cornstarch
- 2 tablespoons cold water
Instructions
1
Preheat a large, heavy skillet over extremely high heat. Introduce oil into the pan and bring it to a boiling point. Add chicken pieces, stirring constantly until they acquire a rich brown color. Introduce the vinegar, soy sauce, and sugar into the pan, stirring until the sugar has completely dissolved. Add red pepper flakes, garlic powder, onion powder, and ginger to enhance the flavor. Gradually lower the heat to a low setting,! the pan, and let it simmer for 15 minutes. At this stage, take a moment to assess the sauce's flavor and make any necessary adjustments to achieve your desired balance of sweet and tart. If it is too acidic, add more sugar; if it is overly sugary, introduce a bit more vinegar.

With the sauce now tailored to your taste, incorporate the mushrooms, peas, and green onions into the pan. Continue to gently simmer over low heat for an additional 5 minutes, allowing the mushrooms to shrink slightly. In a small bowl, whisk together the cornstarch and water until smooth. Gradually stir this mixture into the sauce, continuing to simmer until it reaches your desired consistency.
