Ingredients
- 1 quart vegetable oil for frying, or as needed
- 1 small onion, cut into chunks
- 3 tablespoons grated fresh ginger, or more to taste
- 2 whole cloves, crushed
- 5 ripe plantains, diced into 1/3-inch chunks
- 3 tablespoons ground chile pepper
- salt to taste

Preheat the deep-fryer or large saucepan to a high temperature of 350 degrees F (175 degrees C). Meanwhile, blend the onion into a smooth paste using a blender. Combine the blended onion with grated ginger and ground cloves in a bowl, stirring until well incorporated.

Next, place the plantains in a separate container and pour the onion mixture over them. Add sliced chile pepper and a pinch of salt, gently mixing until the plantains are evenly coated.

Carefully add the coated plantains to the hot oil, allowing them to brown on all sides from both ends. This should take approximately 5 minutes. Remove the fried plantains with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
