Ingredients
- 1 pound tilapia fillets
- 2 tablespoons taco seasoning mix
- 1 tablespoon olive oil
- 1 (4.6 ounce) package taco shells
- 1 (6 ounce) container plain yogurt
- 1 teaspoon lime juice
- 1 teaspoon white sugar
- 1/2 teaspoon grated lime zest
- 1/4 teaspoon salt
- 4 cups coleslaw mix
- 2 tablespoons chopped fresh cilantro
- 1 small jalapeno chile, seeded, finely chopped
- 1 tomato, seeded and diced
Instructions
1
Prepare the fish by sprinkling it with a blend of spices commonly used in Mexican cuisine, known as taco seasoning.
2
Heat a sufficient amount of oil in a 12-inch skillet over medium heat, allowing it to warm up. Cook the fish fillets in the hot oil until they break apart easily with a fork, typically taking 3 to 4 minutes on each side.
3
Preheat your oven to a temperature of 325 degrees Fahrenheit (165 degrees Celsius). Place the taco shells inside and heat them up until they become crispy, taking around 5 minutes.
4
Combine the yogurt, lime juice, sugar, lime zest, and salt in a large bowl. Mix well until the ingredients are fully incorporated. Stir in the coleslaw mix, cilantro, and jalapeno peppers; let it sit for 5 minutes to allow the flavors to meld together.
5
Spoon approximately one-quarter cup of cooked fish and one-quarter cup of coleslaw mixture into each taco shell. Top each shell with about one tablespoon of tomato.
