Ingredients
- 2/3 cup cornstarch

- 1/2 teaspoon freshly ground black pepper
- 1 1/2 teaspoons kosher salt, divided
- 3 large eggs, beaten
- 1 1/2 pounds boneless skinless chicken breasts, cut into 1 inch pieces
- 1/4 cup canola or peanut oil
- 3/4 cup honey
- 1/2 cup hot pepper sauce (such as Crystal®)
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper
- 4 cups cooked white rice
- 1/2 cup thinly sliced scallions
- toasted white sesame seeds, for garnish

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). To ensure even heating, position a rack in the center of your oven.

In a large bowl, whisk together cornstarch, ginger, pepper, and 1 teaspoon of salt. In a separate bowl, whisk together beaten eggs until well combined. Add the chicken to the cornstarch mixture and gently toss to coat evenly.

Heat 2 tablespoons of oil in a large non-stick skillet over medium-high heat until it reaches a shimmering state. While the oil is heating up, transfer 1/3 of the chicken to a shallow dish with eggs and toss to coat.

Using a slotted spoon, transfer the chicken to the hot skillet and cook in the hot oil for about 2 minutes per side, or until it's golden brown on both sides. The chicken will not be fully cooked at this stage, so don't worry about it being done yet. Transfer the chicken to a 9x13-inch baking dish. Repeat this process with the remaining chicken, adding 1 tablespoon of oil to the skillet per new batch - a total of 3 batches.

Meanwhile, in another bowl, whisk together honey, hot sauce, vinegar, crushed red pepper, and the remaining 1/2 teaspoon of salt. Pour this mixture over the chicken in the baking dish and stir to coat everything evenly.

Bake the chicken in your preheated oven for 25 to 30 minutes, or until it's no longer pink in the center and the juices run clear. Use a thermometer to check if the chicken has reached an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). Stir halfway through the cooking time to ensure even cooking.
