- 1 pound chicken wings
- 2 tablespoons vegetable oil
- 1 1/2 cups water
- 3 bay leaves
- 1 teaspoon whole peppercorns
- 2 tablespoons white vinegar
- 1 teaspoon white sugar, or to taste
- 1/4 teaspoon fine salt, or to taste

Combine the soy sauce, jalapeno peppers, and garlic in a large glass or ceramic container to create a marinade. Add the chicken wings and mix well, ensuring they are evenly coated with the sauce. Cover the container with plastic wrap and refrigerate for at least 1 hour to allow the flavors to penetrate the meat.

Next, remove the chicken wings from the marinade and gently shake off any excess. Set aside the marinade for later use.

In a large saucepan, heat the oil over medium heat. Once hot, add the chicken wings and cook for 2 minutes on each side, or until they are golden brown. Carefully pour in the reserved marinade, including the garlic, and a small amount of water. Bring the mixture to a boil, then add bay leaves and peppercorns to the saucepan.

Simmer the mixture over medium heat until the chicken is tender, approximately 20 minutes. To check for doneness, insert an instant-read thermometer into the thickest part of the chicken near the bone. The internal temperature should reach 165 degrees F (74 degrees C).

Once the chicken is cooked, stir in vinegar and continue to cook for 5 minutes. Stir again and season the dish with sugar and salt according to your taste preferences.
