- 3 tablespoons rice vinegar
- 3 tablespoons fresh lime juice

- 1 medium onion, sliced
- 1 bulb shallot, chopped
- 3 cloves garlic, minced, or more to taste
- 1 pound boneless chicken, thinly sliced
- 1 large green bell pepper, sliced into strips
- 1 large egg, lightly beaten
- 2 sprigs fresh basil, leaves removed and torn

Start by placing the rice noodles into a bowl and covering them with hot water. This will help to soften the noodles, allowing you to separate them easily with a fork or your hands. Allow the noodles to soak for approximately 45 minutes.

While the noodles are soaking, prepare a sauce by whisking together oyster sauce, sugar, vinegar, and lime juice in a separate bowl until it reaches a smooth consistency. Set the sauce aside for later use.

Next, heat a sufficient amount of oil in a wok or large skillet over medium-high heat. Once the oil is hot, add sliced onions, minced shallots, and minced garlic to the pan. Cook and stir constantly until these ingredients are fragrant and slightly softened, taking around 2 to 3 minutes.

Add diced chicken and sliced bell peppers to the pan, stirring constantly until the chicken is no longer pink, taking about 5 to 7 minutes. Use a spatula to push the chicken mixture to one side of the wok.

Pour beaten eggs into the empty side of the hot wok. Cook until the eggs start to set, about 1 to 2 minutes. Flip the eggs over and cook for an additional minute or two, until they are fully set. Use a fork to break the eggs apart and stir them into the chicken mixture.

Mix in the reserved sauce you prepared earlier, along with some chopped basil. Combine everything well to ensure a harmonious blend of flavors.

Finally, drain the cooked noodles and add them to the chicken mixture. Cook and stir until everything is heated through, taking around 2 to 3 minutes.
