Ingredients
- 1 teaspoon vegetable oil
- 4 cloves garlic, minced
- 3 tablespoons white vinegar
- 1 teaspoon white sugar, or to taste
- 1 tablespoon chile-garlic sauce (such as Huy Fong Foods®)
- 1 tablespoon fish sauce
- 1 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 2 medium cucumbers - halved lengthwise, seeds scraped out with a spoon, and thinly sliced
- 1/2 cup chopped peanuts
- 2 green onions, chopped
Instructions
1
Heat a moderate amount of vegetable oil in a compact cooking vessel over an intermediate temperature. Introduce minced garlic into the skillet and cook, stirring constantly, until it becomes tender and has a subtle caramelized hue, approximately 3 to 5 minutes. Set the skillet aside to cool down.
2
In a separate container, combine vinegar and sugar using a whisking motion until the sugar has fully incorporated into the liquid. Gradually whisk in chili-garlic sauce, fish sauce, coriander, red pepper flakes, and the cooled garlic until a uniform blend is achieved. Stir in sliced cucumbers, peanuts, and green onions until they are evenly coated with the dressing. Place the container in the refrigerator for at least 1 hour or overnight before serving.
